ויקרא ז:כג הלכה: Sefer HaChinukh

That we not eat forbidden fat (chelev): That we not eat the forbidden fat of a pure animal, as it is stated (Leviticus 7:23), "Any chelev of an ox or sheep or goat you shall not eat."
